Pineapples, honeydew melon, and Galia melon turn bitter in milk due to an enzyme called bromelain in pineapples and a similar enzyme in the melons. When these fruits are combined with milk, the enzymes break down the proteins in the milk, resulting in a bitter taste. This reaction is similar to the curdling of milk, which occurs when proteins in the milk are denatured.
